Bhendyachi Chincha-Goolachi Bhaji 

Ingredients:

  • 1/4 kg Ladies fingers
  • 2 tablespoons Tamarind pulp
  • 2 tablespoons Grated jaggery
  • 1/2 teaspoon Mustard seeds
  • 1 tablespoon Oil
  • 1 pinch Asafoetida
  • 1 pinch Turmeric
  • Salt

Method :

Wash and dry the lady's fingers. Chop them into 3/4 inch bits.

Heat oil in a deep bottomed pan, add the mustard seeds, asafoetida and turmeric powder. When the seeds start crackling add the chopped lady fingers. Saute on a high flame for 5-7 minutes. Add the tamrind pulp, a few tablespoons of water and grated jaggery. Mix well.

Reduce the heat and cook covered for about 15 minutes, stirring occasionally.

Serve garnished with coriander.
