Methi Chi Bhaji (Spiced Fenugreek Leaves)

Ingredients:

  • 1 bunch Fenugreek leaves
  • 1 no. Onion
  • 2 nos. Green chillies
  • 1 tablespoon Chopped garlic
  • 3/4 teaspoon Mustard seeds
  • 1/4 teaspoon Turmeric powder
  • 11/2 tablespoons Oil
  • 1 pinch Asafoetida
  • 1 pinch Sugar
  • Salt
Method :

Clean and rinse the fenugreek leaves thoroughly. Chop them coarsely. Finely chop the onion.

Heat the oil in a pan and add the mustard seeds, turmeric powder, asafoetida and chillies. Saute for 2-3 minutes. Add the garlic and saute till brown. Add the chopped onion and saute till crisp.

Add the fenugreek leaves and saute on a high flame till they wilt. Reduce the heat and cook till they are completely cooked. Add salt, sugar and little water if required.

Serve hot with chapattis.
