Roast the brinjals directly over the gas flame. Take off the skin and mash the brinjals well. Heat oil and fry the onions till transparent, add the green chillies and ginger. Fry for one minute. Add the chopped tomatoes, fry for about 3-4 minutes, add the red chilli powder, coconut and the curds. Saute for a minute. Finally, add the mashed brinjals. Cook for about 3-4 minutes. Garnish with grated coconut and chopped coriander. |
