Lemon Rice
Ingredients:
- Rice 1 cup uncooked
- Lemon 1 Big
- Green Chilies 5
- Ginger 1/4 " piece grated finely
- Coriander 1 tbsp finely chopped
- Turmeric Powder 1/4 tbsp
- Mustard seeds 1 tsp
- Chana Daal 1 tbsp
- Asafoetida a pinch
- Oil 2 1/2 tbsp
- Salt to taste
Method:
Cook the rice with less water so that the grains stay separated from each other. Set aside and allow to cool.
Cut the lemon in halves and squeeze out the juice.
Heat oil in a pan. Once the oil is heated add mustard seeds, chana
daal, turmeric powder and asafetida.
As the chana daal turns golden brown, add the lemon juice and salt.
Allow to boil for 3-4 minutes.
Add the prepared lemon syrup to the cooked rice and stir well on medium heat.
Cover and cook for a couple of minutes.
Sprinkle chopped coriander and serve with Raita or Kosambri.
