Rajma 

Ingredients:

  • Rajma (Red Kidney Beans) 1 cup (uncooked)
  • Onions 4 Medium
  • Tomatoes 3 Medium 
  • Ginger+Garlic paste 1 tsp
  • Green chilly paste 3-4 finely chopped
  • Lemon juice 1 tsp
  • Red chilli powder 1 tsp
  • Garam masala powder 1 tsp
  • Turmeric powder 1/2 tsp
  • Oil 3 tbsp
  • Mustard seeds 1/2 tsp
  • Cumin seeds 1 tsp
  • Coriander leaves 1 tbsp finely chopped 
  • Salt to taste

Method :

Soak rajma (red kidney beans) in water overnight. 
Next day drain the water and pressure cook rajma till soft. 
If using canned Red kidney beans, omit steps 1 & 2 . 
Heat 2 tbsp oil in a heavy bottomed pan. Fry the onions till they turn golden brown, add finely chopped tomatoes & cook till soft. Keep aside. 
When cool grind this onion & tomato mixture to a coarse paste. 
Heat the remaining oil and add the mustard and cumin seeds . 
Add the turmeric and the ginger+garlic paste. Fry for a few seconds. 
Add the chopped green chilli and the ground onion+tomato paste. 
Add the cooked rajma to this. Stir in the salt, red chilly powder, garam masala powder and lemon juice. 
Simmer it to about 10-15 minutes. 
Garnish with chopped coriander leaves. 
Serve hot with parathas, chapaatis & steamed white rice topped with a little ghee.
