Spicy Beans
Ingredients:
- Green Beans 1 lb
- Tomatoes 2 medium (finely chopped)
- Lemon Juice 1 1/2 tbsp
- Fresh Ginger 1 " piece (sliced thinly and crushed)
- Garlic 8 cloves crushed
- Oil 2 tbsp
- Fresh ground Black Pepper 1/2 tsp
- Coriander Seeds 2 tsp (crushed)
- Cumin Seeds 2 tsp (crushed)
- Water 1/2 cup
- Salt to taste
Method :
Wash the beans, pat them dry and trim the ends. Cut them in halfs crosswise.
Grind the ginger and garlic to a fine paste adding a tablespoon of water, if necessary.
Heat the oil in a heavy saucepan over a medium flame. When hot, put in the crushed cumin seeds.
Add the ginger+garlic paste. Stir and cook for about half a minute.
Add the crushed coriander and stir a few times.
Add the finely chopped tomatoes mashing them with the back of a slotted spoon and cook till soft .
Now add the beans and salt and 1/2 cup of water and simmer them.
Cover, turn heat to low and cook till the beans are tender.
Remove the cover. Add the lemon juice and freshly ground pepper.
Turn up the heat and evaporate the remaining liquid, if any, stirring the beans gently as you do so.
Serve hot with parathas or chapatis.
